Do we need to train our own model?

Not in most enterprise scenarios. Grounding Gemini models in your own documents and systems (retrieval-augmented generation) is enough and much faster.

Can we use a model other than Gemini?

Yes. Google Cloud's AI platform also gives access to open models and some third-party models alongside Gemini. We choose the model best suited to the scenario.
